We are full swing into summer and enjoying all the warm weather activities.
Sweaty runs, canoeing, and trying out fat biking!
Cassie has been doing lots of lounging on the deck and working on her tan. Miles prefers to be inside so he can stay cool and be as close to his food as possible :)
Our garden is producing abundant amounts of leafy greens, and the vegetables will be here soon. I have been picking kale, swiss chard, mixed greens, spinach, and herbs almost daily. Our green beans, cucumbers, zucchini, and tomatoes are very close to ready. We have some ripe blueberries and raspberries too!
Tortellini have always been a favorite of mine, and the ones below from Trader Joes are delicious. I mixed them with homemade basil pesto and kale. Did you know you can make pesto with any kind of nut? Pine nuts are typically used, but you can use any of your favorites such as almonds or walnuts or even sunflower seeds!
Some of our other recent dinners have included grilled chicken with couscous salad (very good recipe) and vegetables, homemade pizza (half pesto and half tomato) with salad, and grilled portobello burgers (topped with feta and roasted red peppers) with sweet potatoes and salad.
I have also been drinking lots of smoothies. They are great after a hot run and a perfect compliment to a sandwich or wrap at lunch. My smoothies usually include some combination of greek yogurt, frozen mixed berries, and peanut or almond butter.
