Hope everyone had a good weekend! I ran a 5k in beautiful Stowe, VT. The course started on a dirt road, went to a paved road, and then finished on a bike path with wooden bridges, so there was a wide variety of surfaces and scenery. The bike path portion had some sharp twists and turns with short inclines, but it was nicely shaded from the hot sun.
On our way to the race, they were launching hot air balloons and it was so cool! They were stunning to watch with the mountains and bright blue sky. It is definitely on my bucket list to ride in one someday.
The race was very well organized and a good size. There was the 5k as well as an 8-miler, and the total number of participants was about 800. It was a mass start and I positioned myself close to the front, which was amongst a bunch of men!
I started out right on pace, but I struggled to maintain my speed during the second mile. The third mile I got back on track and finished in 19:51. My goal was to PR, but today wasn't the day. I still won first female overall and was rewarded with lots of prizes! Everyone got a t-shirt and for winning I got a bag, towel, compression socks, pint glasses, and water bottle. I could barely carry everything! Thank goodness for the bag.
I am excited to do more speed training for an upcoming 10k and another 5k before I start going long again for a marathon. It is fun to have a quick turnaround after these shorter races so I can do multiple in a row, whereas I need one to two months after a marathon before racing again.
Before I finish, below is our meal plan for this week if you are struggling with ideas. I also made a quinoa salad with tomatoes, mozzarella, and basil for lunches.
- Monday: Pasta with pesto, chicken, and kale from the garden
- Tuesday: Hamburgers and sweet potato fries
- Wednesday: Vegetable burritos with black beans and homemade guacamole
- Thursday: Grilled zucchini, pepper, and chicken kabobs with rice
- Friday: Pizza with kale and zucchini from the garden
Can you tell we have a lot of zucchini?! This might be an ongoing theme. Finally, we also have black raspberries! One of my favorites, especially on top of cereal and overnight oats. BOTH dogs may or may not have figured out how to eat them right off the bush... :)
