We love pizza at our house, but sometimes all the heavy cheese and toppings doesn't sit well in our tummies, especially the night before an important run. We love making homemade pizza because it tastes delicious, it is affordable, and we can control what goes on it. If I am in a pinch for time, I will buy naan at the store and use that as the crust. Otherwise, I make homemade dough too. The recipe I've been using lately is from the Cookie and Kate cookbook. It is delicious and so simple. I love her blog and frequently make her recipes.
Our favorite way to top the pizza is half pesto and half tomato sauce. I make homemade pesto about once a month and freeze extra in an ice cube tray. This way I can take out small portions one at a time as needed. When putting on the tomato sauce, it has to be a relatively thin layer or the pizza will be soggy. Next goes the cheese. Usually we have just mozzarella (shredded or sliced from a ball), but I enjoy using some feta too. After that, I put on any leftover veggies we have such as bell peppers, mushrooms, black olives, sun-dried tomatoes, spinach or kale. For kale or other greens, chop it up and then massage some olive oil into it - this will soften the greens and help prevent burning. I will often add garlic, oregano, and fresh basil as well.
The pizza below is half pesto, half tomato sauce, shredded mozzarella, olives, and kale. Baked at 500 degrees F for 10 minutes. Yum!
