The Best of Summer

We are full swing into summer and enjoying all the warm weather activities. Our garden is producing abundant amounts of leafy greens, and the vegetables will be here soon. Some of our other recent dinners have included grilled chicken with couscous salad, homemade pizza (half pesto and half tomato), and grilled portobello burgers with sweet potatoes and salad. I have also been drinking lots of smoothies. Hope you are having a great summer!

Hello! The dogs want to know what’s for dinner!? We’ve finally made it to spring and I couldn’t be more excited for sun, flowers, meals on the porch, and no more shoveling. We’ve been eating well and I have a few meals to share with you. We recently had stuffed peppers with jasmine rice, ground turkey, tomato sauce, herbs, and mozzarella cheese. They were delicious.

I hope you had a great Thanksgiving! I got to try sweet potato pie for the first time, and I have to say it tastes just like pumpkin pie. It was delicious! You know it’s almost fall when you start seeing Halloween and Christmas decorations in all the catalogues! :) I’m not quite ready, but I do enjoy the changing seasons. Pumpkins, falling leaves, and crisp temperatures are starting to work their way in. We had one more beautiful summer sunset the other night.

I love marathon training, and fall is the perfect time to increase your mileage - cooler temps, less humidity, and beautiful views. I’ve had some great marathon workouts recently including mile repeats, progression tempo, regular tempo, and long runs with marathon pace miles. Here are some highlights.
